GTFO – Golden Toasty French Onion
It’s been really cold and we got a decent snow this week. As a result I’ve been dipping into some comfort foods. One thing that’s great on a cold day is a nice big bowl of French Onion soup. It’s really not that difficult to make, and it’s bottom-slurping good. I’ve been really disappointed lately, because despite having some interesting meals and gatherings, I’ve been suffering from a broken camera. Well, I’ve finally purchased a new one! So, I’ve got not just a couple photos this round, it’s actually an overabundance of them.
3 small yellow onions, sliced
1 bunch green onions, finely chopped
3 cloves garlic, minced (or 1 elephant)
3 – 14 oz cans beef broth
6 oz Manchego cheese slices
2 tbsp Worcestershire sauce
2 tsp extra virgin olive oil
4 slices bread, cut into 1 inch squares
garlic powder
thyme
ground pepper
sea salt
Serves 2.
Preheat oven to 425 degrees. In a large pot, add oil then begin to simmer garlic and yellow onions over medium heat when oil is hot. Stir constantly. Do not cook green onions with the rest. As onions begin to loose shape (or smoke!) add beef broth. Stir. Add Worcestershire sauce. Add green onion and stir. Add salt and pepper to taste. Reduce heat to a low simmer.
Add bread squares to a foiled cookie sheet. Season lightly with garlic powder, thyme, salt and pepper. These should be light and flavorful, not a heavy season as one may find on a salad crouton. Toast in the oven until golden brown and crispy.
Spoon soup into large bowls–you can use the cookie sheet from the bread-toasting process if you wish. Add a layer of your cooked bread squares over the entire top of the soup. Add a layer of Manchego cheese to cover all the soup and bread. Add back into the oven for up to 10 minutes, letting the cheese melt and brown (but not burn).
Remove from the oven and allow these to cool for about 5 minutes before serving. They will stay piping hot for the entire meal so don’t burn yourself or guests. If you’d like to see any enlarged pictures from the collage above, you can find them in my Gallery!
