Curried Green Peas with Summer Squash
1 cup – split green peas
1/2 – summer squash
3 cups water
2 teaspoons (4 cloves) garlic
1 – fresh lemon, juiced
3 tsp. curry powder
2 tsp. ground paprika
1/4 tbsp. extra virgin olive oil
fresh ground sea salt
fresh ground black pepper
A nice treat, or a vegetarian meal.
- Juice the lemon, reserve liquid.
- Add split peas to water in a medium pot.
- Add garlic and stir.
- Add spices and simmer. 20 minutes for peas, 10 for squash (so, add in these in stages)
I imagine that bacon, more oil, a crip a/o crusty garnish, or even a little butter could work well here. Actually crisp, seasoned toasts of bread would work amazingly (crostini, for example). I’m avoiding indulgence and sticking to the basic recipe, however.
